BRASSERIE by ACADEMIA — the first French brasserie in St. Petersburg
A restaurant serving classic French cuisine, inspired by France’s gastronomic culture and its unique philosophy of art de vivre —the art of living beautifully, leisurely, and with pleasure.
The brasserie is a space with a warm, friendly atmosphere for everyday life, not just for special occasions. Here, people take their time enjoying breakfast with the freshest croissants and coffee, meet up with friends after work over a glass of French wine, share desserts for two, and often stay longer than they planned.
Chef's Breakfast
Start your day in style with a leisurely selection of classic dishes from the Chef’s special set menu, served restaurant-style, with true French hedonism and without the hustle and bustle of a hotel buffet.
Brand Chef Ilya Kharchenko has curated a gourmet morning set with a French flair for hotel guests: an omelet with mozzarella, a croissant with chicken fillet and Béarnaise sauce, croque-madame and crêpes Suzette, porridge, cheese pancakes, Greek yogurt with granola, and French toast with cream and ice cream.
Breakfast from the set menu is served in the brasserie from 8:00 a.m. to 12:00 p.m.
Lunch and dinner by the chef
Exclusively for guests of the ACADEMIA Hotel, ACADEMIA’s brand chef Ilya Kharchenko has created a three-course gourmet set menu for lunch and dinner in the finest traditions of classic French cuisine.
Spend time in the cozy atmosphere of the brasserie, savoring every detail and nuance: the variety of flavor combinations, the impeccable freshness of dishes prepared for you “to order,” exquisite presentation, and a cozy atmosphere that invites you to socialize without haste or fuss.
Lunch and dinner from the set menu are served at the restaurant from 12:00 PM to 10:30 PM.

Restaurant-quality French cuisine, served with carefully selected wine pairings, allows you to spend the evening in the relaxed atmosphere of your room—free from the hustle and bustle and without a dress code—yet immersed in the spirit of Parisian art de vivre.
Room service is available daily from 8:00 AM to 10:30 PM. Room service charge: 15% of the bill total.

The concept of the brasserie was inspired by culinary journeys through France. The ACADEMIA team visited four cities where the country’s culinary traditions have historically taken shape — Lyon, Bordeaux, Rouen, and, of course, Paris.
ACADEMIA’s brand chef, Ilya Kharchenko known for his attentive and respectful approach to the classics and his refined palate — has developed a menu for BRASSERIE by ACADEMIA centered on classic, accessible French cuisine. The format is a short, well-thought-out menu without excess, large portions for two, and the opportunity to create your own gastronomic rituals.
The menu features French classics: croissants, gravlax salmon, Burgundian snails, onion soup, beef bourguignon, duck breast, entrecôte with fries, crème brûlée, Paris-Brest pastry, tarte Tatin, and a cheese platter.

The bar concept BRASSERIE by ACADEMIA, created by head bartender Daniil Lehman, is inspired by a date of special significance for France: the year 843. That year saw the signing of the Treaty of Verdun, which is considered the birth of French culture.
This idea became the foundation of the signature 8/4/3 flavor system:
— 8 signature cocktails dedicated to the cities and character of France;
— 4 classic French 75 cocktails in various variations, crafted with respect for tradition;
— 3 dessert cocktails — the sweet side of France in a glass
The brasserie’s wine list features over 20 French wines, as well as spirits, where France takes center stage.
